Dann den Teig auf das Nudelbrett geben, eine Teigrolle formen, Teiglinge abstechen (30 g f\u00fcr kleine K\u00fcchlein &#8211; \u00a040 g f\u00fcr gro\u00dfe K\u00fcchlein) und Kugeln formen. Abgedeckt nochmals gehen lassen. Kniek\u00fcchler mit Folie \u00fcberdecken, Teigling mittig auflegen, mit Folie bedecken und mit einem Brettchen sanft dr\u00fccken. Die nun sch\u00f6n geformten K\u00fcchlein in hei\u00dfem Fett (Kochl\u00f6ffelprobe) ausbacken.
